Slap Yo' Mama

First thing today, I start dinner even though I don't want to cook - at all. Of course, "no cook, no eat" so, I have to cook if I want to eat. Ummm...now what's quick to make and good going down? I've got it, baked chicken, mashed potatoes, green salad, hot cornbread, and orange juice.

I grab the egg timer and set it for 20 minutes. This first Sunday of the new year I vow to have dinner simmering when that timer goes off. I will not be held hostage in the kitchen fiddling and diddling like a knight in shining metal armour.

At the end of the twenty minutes I'm done, the meat is seasoned and in the oven, potatoes are peeled and boiling, and the fixings for the green salad are ready in the fridge. I don't remember doing it this fast in...ummm, I don't know when. Cornbread is in the oven too. Wow, I should do this more often. Cleaning out the fridge can wait, that stuff is not going anywhere.

With a few minutes left before the chicken is ready I decide to mop it with bar-b-que sauce for an added kick. Mop mop mop, pop it back in the oven so the sauce can sink in. Take the cornbread out, it's ready. Timer time again! Ten minutes ought to do it.

As I check the chicken before covering it, I turn a couple of pieces over to make sure bar-b-que sauce is spread evenly on both sides. Man-n-n, this meat's so tender it's falling apart, can't even pick it up with tongs. Oh well, just a taste to make sure it's good. Lick lick lick, gotta get it off my fingers.

Unn-um-ummm...mannnn...this chicken is so good it'll make you want to "slap-yo'-mama"!!!

I'll eat later, it's ready when I am.

    I used to LOVE to cook. I don't know what happened. I can't hardly force myself to open a can of Progresso Soup. My poor husband is so patient with me. He'd be so excited to get a meal like this one.

    Maybe tomorrow...

    Okay, okay... I'll get out my timer and make a meal this very afternoon. You've inspired me.
